ROANOKE, Va.—Gilbert Bolivar joins Retirement Unlimited, Inc. as vice president of food & beverage for RUI communities in Virginia and Florida. Bolivar is a highly accomplished hospitality professional with leadership experience across large-scale operations within resorts, casinos, nightclubs, retail, and theme parks. He possesses extensive expertise and knowledge that is proven to build long-term business success.
Bolivar brings more than 15 years of leadership experience in the development of opening and operating hotels, restaurants, nightclubs, retail, and theme parks. He holds a master’s certificate in Hospitality Management from Cornell University.
A Miami native, Bolivar’s hospitality career began in South Beach, Fla., in 2002 at Mangos Tropical Café. He has since held several management positions, working for some of the top hospitality organizations: Kimpton Hotels & Resorts, Marriott, Hilton, Texas De Brazil Restaurant Group, Darden Restaurants, Caesars Entertainment, H.E.B Grocery/Central Market, and The Waldorf Astoria Hotel. Most recently, he worked with NBC Universal as director of revenue operations at Universal Orlando Resort, where he oversaw food and beverage operations for Universal Studios Florida, one of the largest amusement parks in the United States.
Bolivar will be overseeing and supporting the food and beverage initiatives at all Retirement Unlimited, Inc community locations. He will report directly to the RUI president Doris-Ellie Sullivan.
